The grill is sizzling, and the tunes are pumping. The start of summer has arrived, filling the air with sweet sounds and the mouth-watering aroma of barbeques. If one thing is for certain, it’s that Memorial Day is synonymous with festive cookouts and kickin’ it with good friends. 

Chances are you already have your award-winning burger recipe on stand-by and those go-to sides already sorted out. But what about something sweet? No meal, cookout or otherwise, is complete without a refreshing treat, and we’ve got the perfect pop for helping you channel those summertime vibes. 

Our Altos Blueberry Mint Ice Pops bring together some of our most favorite things: delicious blueberries, fresh mint and our Altos Reposado. It’s a little bit sweet, a little bit fruity and 100% guaranteed to impress and satisfy friends during your holiday cookout. The best part? They’re perfect for making ahead, so when it comes time for something sweet, they’ll be ready to go. 

We enjoy making them with seasonal summer fruit; feel free to swap the blueberries for whatever is in season. Raspberries, strawberries and sweet red cherries (pitted) can be easily substituted, as well as quality frozen berries should you have a hankering for these in the off season. (And I mean, come on, why wouldn’t you?)

To prepare, rinse, clean and prep your fruit, removing any stems and leaves. Next, make a mint-infused simple syrup, which complements our perfectly aged Reposado. Combine the cooled mixture with fresh lime juice and our tequila. Add to any ice pop mold, along with a bit of fresh fruit and a few mint leaves.

Festive, fresh, flavorful. We’re certain that we’ll be enjoying these on repeat all summer long. 

Altos Blueberry Mint Ice Pops (makes 6-8, depending on mold)

Ingredients:

  • Sugar ½ cup
  • Water ½ cup
  • Mint leaves, de-stemmed large bunch
  • Lime juice ¾ cup
  • Altos Tequila Reposado 6 tablespoons
  • Blueberries or other fresh fruit (rinsed, de-stemmed and sliced if needed) 6 ounces
  • Ice pop mold

Directions:

In a small saucepan, create a mint simple syrup by combining the sugar, water and all but 8 of the mint leaves.

Heat over medium until sugar is dissolved.

Discard the mint leaves and let the mixture cool.

Strain the mint and add contents to a large bowl.

Add the lime juice and Altos Tequila Reposado.

Stir well to combine.

Drop a few pieces of fruit into each mold along with a mint leaf.

Top with tequila mixture and freeze overnight.
